Uncle Giovanna is the head of the business, she likes to stay behind the scenes, I’d say it’s a good clue to understand that she’s the Tre Archi’s chef. 66 years of pure passion for cooking and the handmade pasta, never tired doing her job. A war machine, when she’s in the kitchen it’s not easy to beat her. Indeed it’s easy to come back to the Sundays at grandmother Nonna Flora’s lunch. We can define her cuisine simple, handmade, but never banal.
